Fish Oil Slows Progression of Plaque Buildup in Arteries
For the first time, studies revealed that postmenopausal women who ate one or more servings of tuna or dark fish could slow down the progression of narrowing of the arteries, otherwise known as arteriosclerosis.

The Deteriorating Impact of Arteriosclerosis

Simply stated, arteriosclerosis is the buildup of plaque in the arteries. If the plaque grows large enough, it could dramatically cut down the capability of blood flow. One of the most dangerous results of arteriosclerosis happens when a blood clot forms from the plaque rupturing, which then breaks off and travels to a different part of the body.

If a blood vessel that feeds the heart is blocked, the result is a heart attack. On the other hand if a blood vessel that feeds the brain is blocked, the result is a stroke. As heart disease worsens, arteries begin to clog, which causes a reduction in the blood flow to the heart.

A study of women was designed to evaluate the consumption of fish and atherosclerosis. The study consisted of the women receiving three coronary angiographies, an X-ray of the blood vessels of the heart. One test was taken at the onset of the study and the second test was given three years after completion of the study.

The purpose of the tests was to find out if there was any change in the diameter of the coronary arteries and any signs of coronary lesions.

The women who included fish at least once a week into their diet were shown to have lesser lesions in their arteries than the women who ate fish less frequently. Even more significant were the findings revealing that women with diabetes who consumed fish more than once a week displayed a 60 percent less narrowing of the arteries than the women who ate less than two servings of fish each week.

These findings were an indication of how fish could slow down the progression of coronary artery disease. These findings motivated the American Dietetic Association to make the following recommendations:
• Eat at least two servings of fish each week
• Eat fatty fish such as canned tuna

As I have written in the past, taking plenty of fish oil, which is rich in omega-3, is known to cut the risk of heart disease and death. Now researchers have found that eating fish significantly reduces the progression of coronary artery atherosclerosis (the build-up of plaques in the arteries) among women who already have coronary artery disease.
So not only is the omega-3 in fish useful for preventing heart disease, but it appears to slow the progression of it as well. It's important to mention that I don't recommend eating fish due to all of the contamination concerns.

It is very rare where a drug-based solution to a chronic degenerative health condition is the answer. However, many doctors prescribe oral drugs called bisphosphonates to treat osteoporosis.

Bisphosphonates are a family of non-hormonal drugs used to prevent and treat osteoporosis. There are many bisphosphonates currently in clinical use, including alendronate (Fosamax) and etidronate (Didronel).
Unfortunately, most doctors don't have any clue that these biphosphanate drugs are toxic poisons that contain the same type of chemicals that are used to remove soap scum from your bathtub. These drugs can have drawbacks including gastrointestinal intolerance and poor absorption by the gastrointestinal tract.

They work by killing osteoclasts in the bone that are responsible for remodeling the bone. The theory is that if you can prevent bone loss you will have stronger bone.

Unfortunately, the theory doesn't hold up. The osteoclasts are metabolically poisoned (killed) and the bone does become denser. The denser bone does not translate to stronger bone. Although the bone is denser it is actually more brittle and more susceptible to fracture.
While biphosphonate drugs work through osteoclasts that remove bone, vitamin K has been linked to osteoblasts, the cells that generate or "lay down" bone and produce a specific protein known as osteocalcin.
It was found that the protein osteocalcin acts as a kind of glue that helps to incorporate calcium into the bones, and vitamin K2 is necessary in order to produce this protein.

Research shows that vitamin K regulates calcium and keeps it in the bones and out of arteries -- stopping heart attack and osteoporosis at the same time. Vitamin K seems to do the impossible accommodating the needs of both bones and arteries.

Vitamin K works through an amino acid called "Gla," which stands for gamma carboxyglutamic acid. Gla is part of a certain kind of protein that controls calcium. Researchers believe there are at least one hundred of these proteins scattered throughout the body. Vitamin K is the only vitamin that makes these proteins work.

Vitamin K achieves a process on the proteins called "carboxylation." Carboxylation gives the proteins claws so they can hold onto calcium. Once the protein grabs onto calcium -- it can be moved.
Proteins that don't get enough vitamin K can't hold on to calcium. Without a functioning protein to control it, calcium drifts out of bone and into arteries and other soft tissue. Vitamin K2 gently redirects the "lost" calcium back to the bone bank.

One ground breaking study observed the change in circulating vitamin K2 (MK-7) and Gla osteocalcin concentrations in normal individuals with the intake of natto. Volunteers were divided into three groups. One group received regular natto, while the other two groups were given natto reinforced with two varying concentrations of MK-7.

Serum MK-7 and gamma-carboxylated osteocalcin concentrations were significantly raised 7, 10, and 14 days after the start of the intake of reinforced natto. However, serum gamma-carboxylated osteocalcin levels were not significantly elevated by the intake of regular natto, although serum-MK-7 levels were significantly raised.

The findings suggest that the intake of MK-7 of less than an appropriate amount may not cause any significant elevation of serum gamma-carboxylated osteocalcin in the bone matrix. The intake of reinforced natto, which contains more MK-7 than regular natto, may contribute in the prevention of age related bone loss.

Vitamin K2: The Missing Link to Maintaining Vascular Health
Vitamin K helps to prevent hardening of the arteries, a common factor in coronary artery disease and heart failure. Arteries in children are very flexible and stretch with sporadic increases in blood pressures but return to their initial form after the stress. This ability of the artery to stretch and "bounce back into shape" is called compliance.

As we age, arteries become stiff and hard -- resembling the mineral deposits in old water pipes. Our vessels thicken with calcium and other oxidized fats gradually narrowing the channels and restricting blood flow.
The increased pressure on the narrowing openness creates a "back pressure" which increases our blood pressure and the work of the heart. Eventually, the heart tires from the increased work and begins to fail -- causing "congestive heart failure."

The drug warfarin is currently the best treatment for patients at risk from blood clots. Although scientists know it inhibits the action of vitamin K by targeting the protein, thinning the blood and preventing the formation of life threatening blood clots, they do not understand how this happens. Pinpointing the gene will help scientists understand the link between the protein and vitamin K.

Scientists from the MRC's Clinical Sciences Centre at Imperial College in London, and research institutions in Germany, identified the gene that controls the production of a protein essential for the action of vitamin K, which is necessary for the formation of a clot. Their findings are reported in Nature.

The research team studied the genes of warfarin (coumadin) resistant rats and patients, comparing them with the genes of families with an inherited disorder in handling vitamin K that prevents them from forming clots properly. A mutation was found in the same gene in all three groups. This mutation identified the gene that, under normal genetic circumstances, controls the production of the protein responsible for the action of vitamin K.

Pinpointing the target of warfarin will help to find out more about how vitamin K works, leading to the development of more effective blood thinning treatments for all those at risk from blood clots.
Vitamin K2 supplementation is one way of insuring that arteries and bones receive sufficient amounts of vitamin K2 to prevent cardiovascular disease. In the Rotterdam study, clinical analysis of 4,500 patients showed a correlation between long-term vitamin K2 (menaquinone-7) intake and the lower incidence of aortic calcification. For vitamin K1 the observed associations were weaker, suggesting preferential uptake of K2 by the blood vessel wall.

The beneficial effect of vitamin K2 is related to the carboxylation of matrix-Gla Protein. Arteries without atherosclerosis have 20-50 fold increases in vitamin K2 concentration than arteries with plaque in the same human body. Arteries were found to be more flexible and elastic than other arteries without vitamin K2.

With more than 4,000 participants, those with the highest K2 consumption had 50 percent fewer heart attacks, 50 percent fewer CV-related deaths and 25 percent fewer deaths overall. While more research is needed, early findings suggest that by regulating calcium, vitamin K2 reduces the risk of arteriosclerosis.

Breakthrough Research Confirms Vitamin K2 Inhibits Cancer
A flood of new studies suggests that vitamin K may help combat cancer. Preliminary reports suggest that vitamin K may one day be used to manipulate cancer cells to stop their dangerous, unregulated growth.

A study published in the September 2003 International Journal of Oncology, found that treating lung cancer patients with vitamin K2 slowed the growth of cancer cells, and previous studies have shown benefit in treating leukemia.

According to a new study published in the July 21 issue of Journal of the American Medical Association, vitamin K2 may deter the development of hepatocellular carcinoma (cancer that arises from hepatocytes, the major cell type of the liver) in women with viral cirrhosis of the liver.

In the study, 40 women diagnosed with viral liver cirrhosis were admitted to a university hospital between 1996 and 1998 and randomized to a treatment or control group. The treatment group received 45 mg/d of vitamin K2. Hepatocellular carcinoma was identified in two of the 21 women given vitamin K2 and nine of the 19 women in the control group.
Scientists concluded there is a possible role for vitamin K2 in the prevention of hepatocellular carcinoma in women with viral cirrhosis. Despite its small size, the study indicated that vitamin K2 decreases the risk of hepatocellular carcinoma to about 20% compared with the control group, suggesting that vitamin K2 may delay the onset of hepatocarcinogenesis.

The results of the trial support previous research indicating vitamin K2 may play a role in controlling cancer cell growth.

Cilantro:
A Common Spice/Herb
That Can Save Your Life
Dr David Williams published in his newsletter Alternative (For the Health Conscious Individual) (Vol. 7, No. 12) June, 1998 the most interesting piece of information to come down the pike in years.

Chelation therapy has been used by conventional medicine to pull lead from people suffering from lead poisoning. Chelation (a Greek term meaning "claws," for it was thought that the chelator "grabbed" the metals from the blood and arteries) therapy is administered intravenously using the chemical agent EDTA. Today scientists know that the grabbing that takes place is simply a metaphor for biochemical reaction when a "chelator" contacts a heavy metal.

From the successes of cleaning up toxic amounts of lead from patients, some doctors experimented with EDTA Chelation therapy to remove mercury and aluminum (associated with Alzheimer's disease; and get this; aluminum works with fluoride; fluoride slips through the blood-brain barrier). Now the interesting thing to come from these studies was that patients with cardiovascular disease reported feeling much better, more alive, could exercise longer without angina pains and shortness of breath.
Again, another theory popped up: if you get rid of the heavy metals in your body, you've removed the source of millions of free radicals and the tissues of the body begin to heal themselves, sloughing off the calcium that causes hardening of the arteries.

Now like most theories, this one has its detractors: the physicians who own yachts purchased with their profits from angioplasties, bypass surgeries, etc. are the most vocal. Intravenous chelation therapy costs a lot less than surgery and is not covered by most insurance companies (cheap? effective? I wonder who runs these companies).

Next we have oral chelation which consists of taking a balanced supplementation schedule that removes heavy metals from your body. This theory too has its detractors: the physicians who do intravenous chelation therapy. Profit is the bottom line in most medical theories. Sadly, all statistics on projected life-span are ignored when a the medical profession's profits are at stake: people on chelation therapy live longer than those having bypass surgery. Simple fact.

However, we now have the perfect chelation therapy as reported by Dr Williams, due to the studies from a lowly physician working alone by the name of Dr Omura. Dr Omura found that fresh cilantro removes heavy metals from the body in less than two weeks.

He also discovered that his patients had fewer colds and flu after removing the heavy metals because it seems that viruses and bacteria like to congregate in organs contaminated by heavy metals. His patients also had fewer Herpes outbreaks after removing these heavy metals.
Cilantro is a common Mexican and Middle Eastern spice. It must be used fresh and the stems too are just as good, however, your best chefs use only the leaves because the stems can be bitter. Tossed into a salad is a perfect way to use cilantro, or added to your favorite salsa really perks it up.

Here is a cilantro pesto sauce that will also do the trick. This is the basic recipe, but if you're like me (I approach cooking and love making with reckless abandon), go ahead and play with the recipe. The first time I made the recipe I nearly tripled the oil, lemon juice and garlic, added a dash of cayenne pepper, and got rave reviews.

Cilantro Pesto

1 clove garlic
1/2 cup almonds, cashews, or other nuts
1 cup packed fresh cilantro leaves (and smaller stems)
2 tablespoons lemon juice (a professional chef recommends just one Tbl of lemon juice)
6 tablespoons olive oil
Celtic Sea Salt to taste (www.healthfree.com is where you can order your salt)

Blend the cilantro and olive oil in a blender, add other ingredients to make a nice smooth paste, then go ahead and add some nuts and/or seeds: pistachio, cashews, almonds, pumpkin seeds, sunflower seeds, you name it. Have fun. Add it to your favorite pasta and serve warm or cold. Remember, cayenne pepper added to anything has a synergistic effect, making all the other ingredients work better. Simple fact.

Cilantro-Pepita Dressing
1 medium Anaheim Chili, roasted -- peeled and seeded
3 tablespoons Roasted pumpkin seeds (Shelled) -- (pepitas)
1 large Clove garlic (increase to taste)
1/8 teaspoon Freshly ground black pepper (or Cayenne Pepper)
1/2 teaspoon Celtic Sea Salt
3/4 cup Olive Oil
2 tablespoons Red wine vinegar (ahhh, if building your immune system, use organic apple cider vinegar only)
3 tablespoons Grated cotija cheese
1 small Bunch cilantro -- stemmed (Better still, a packed cup of cilantro leaves)
3/4 cup Mayonnaise (Ahhh! you may substitute, Nayonaise, made from soy, or Yogurt)
2 tablespoons Water

Note: If cotija cheese is unavailable, use any hard grating cheese, such as cacique or even Parmesan.

Place chili, pepitas, garlic, pepper, salt, oil, vinegar and cotija cheese in blender or food processor. Blend about 10 seconds, then add cilantro, bit by bit, until smoothly blended. Place mayonnaise and water in large stainless-steel bowl and whisk until smooth. Add blended chili mixture and mix thoroughly

Place in airtight container and refrigerate. Dressing may be stored up to three days. Makes about 2 cups.

Have fun with this. I am always amazed at how many little healthy choices can add up to a very long and fruitful life.
